There was something really pleasing about my last side plate sampler, so I decided to play with that again. This time, the corn on the cob remains, but I changed up the other two dishes. One is a simple green salad with Annie’s Goddess Dressing (I never get tired of it). The other is “Lemony Pan-Fried Chickpeas with Chard” from Color Me Vegan by Colleen Patrick-Goudreau. So quick and easy and super tasty.
