This recipe is from Judita Wignall’s book, Raw & Simple, and it lives up to the promise in that title, as do all of the recipes in the book. I don’t know about you, but sometimes raw cuisine prep can be a bit daunting for me, particularly when a dehydrator or days of planning ahead are involved. These recipes come together quickly and can easily be pulled off by any home cook, with no special equipment required. Hooray!
For this salad, you will be tossing together mixed greens, peaches, pecans and thinly sliced shallots (although I sometimes skip the shallots) with a dressing of olive oil, balsamic vinegar, maple syrup, chipotle chili powder and sea salt. That’s it. Whisk the dressing, toss the salad and boom, you get this.
Super easy. Super delicious. Super satisfying. My family licked their bowls clean!
